Ingredients
gingerbread fondue
1x 400 ml canfull-fat coconut milk
½Cmaple syrup (can substitute another sweetener)
1teaspoonmolasses
½teaspoonvanilla extract
1teaspooncinnamon
¼teaspoonall-spice
french toast
1small loaf dense bread (I used a walnut sourdough)
2tablespoonchickpea flour
1tablespoonnutritional yeast
½teaspooncinnamon
¼teaspoonsea salt
1tablespoonmaple syrup
1Cnondairy milk
3tablespoonvegan butter, for frying
1-2teaspoonpowdered sugar, for dusting
Instructions
Preheat oven to around 150°F to 200°F and place a non-stick or parchment lined baking sheet in the oven. This is where you can keep the cooked french toast sticks warm while you're cooking the rest in batches.
Combine all the ingredients for the gingerbread fondue in a sauce pan over medium heat. Whisk until well combined and allow it to come to a simmer. Then lower your heat and whisk occasionally while it bubbles. This will thicken into a creamy syrup in about 20 minutes.
Meanwhile, slice your bread into thick sticks. Combine the french toast batter ingredients together in a bowl and allow a few pieces to soak while your pan gets hot. Add a coating of vegan butter to the hot pan, then place 3 to 4 battered french toast sticks in the pan. Cook for 1 to 2 minutes on all sides until golden and crispy.
Remove the warm french toast sticks from the oven and dust with powdered sugar just before serving. Pour the warm gingerbread fondue into a bowl or small individual ramekins for dipping.
