    These gingerbread french toast sticks are next level! Look, I love gingerbread. But nothing's less appetizing to me than a hard, stale cookie from a box. You can still get those spicy ginger flavors without having to buy an entire gingerbread house kit, thanks to me!

    Now I do have a great recipe for homemade gingerbread cookies, but also wanted to deliver something you can dig into on a lazy morning. These french toast sticks are the most scrumptious holiday brunch idea you'll probably ever find. 

    Baking these up will send the heavenly smells of gingerbread soaring through your house. It'll surely wake everyone up bright and early on Christmas morning! These gingerbread french toast sticks are perfect for adults, kids, and everyone in between. No need for forks and knives here - just grab and dunk! Everyone will instantly fall in love with dipping them into that sweet, creamy gingerbread fondue... and probably lick their fingers clean!

    You can serve this gingerbread french toast with a family-friendly holiday drink like hazelnut hot chocolate to really knock their stockings off. Winter is the perfect excuse to cozy up with warm, spicy brunches and festive beverages. Am I right?!

    Ingredients

    gingerbread fondue

    • 1 x 400 ml can full-fat coconut milk
    • ½ C maple syrup (can substitute another sweetener)
    • 1 teaspoon molasses
    • ½ teaspoon vanilla extract
    • 1 teaspoon cinnamon
    • ¼ teaspoon all-spice

    french toast

    • 1 small loaf dense bread (I used a walnut sourdough)
    • 2 tablespoon chickpea flour
    • 1 tablespoon nutritional yeast
    • ½ teaspoon cinnamon
    • ¼ teaspoon sea salt
    • 1 tablespoon maple syrup
    • 1 C nondairy milk
    • 3 tablespoon vegan butter, for frying
    • 1-2 teaspoon powdered sugar, for dusting

    Instructions

    • Preheat oven to around 150°F to 200°F and place a non-stick or parchment lined baking sheet in the oven. This is where you can keep the cooked french toast sticks warm while you're cooking the rest in batches.
    • Combine all the ingredients for the gingerbread fondue in a sauce pan over medium heat. Whisk until well combined and allow it to come to a simmer. Then lower your heat and whisk occasionally while it bubbles. This will thicken into a creamy syrup in about 20 minutes.
    • Meanwhile, slice your bread into thick sticks. Combine the french toast batter ingredients together in a bowl and allow a few pieces to soak while your pan gets hot. Add a coating of vegan butter to the hot pan, then place 3 to 4 battered french toast sticks in the pan. Cook for 1 to 2 minutes on all sides until golden and crispy.
    • Remove the warm french toast sticks from the oven and dust with powdered sugar just before serving. Pour the warm gingerbread fondue into a bowl or small individual ramekins for dipping.

        we have a couple other french toast recipes on the blog if you search french toast, and we've used all purpose flour before. I just like the taste and texture of chickpea as it's more egg like

      Hey there. Love your blog, channel, food. I want to make this for xmas morning but I'll be away from home. I'm considering mixing the dry ingredients in a container and making the gingerbread sauce ahead as well and reheating on the stove. Have you ever saved any in the fridge and brought it back to life?

        hey there! yes you can definitely make the gingerbread sauce ahead of time, put it in a jar and reheat before serving!

        You can even do the sticks, battered, and fried, and then re-heat in a pan before serving. I did that with the leftoevrs from making this video. STILL tasty! But I do like your idea of just bringing the dry ingredients mixed and then making the batter on the day. The fresher the better! hope you enjoy!

      Delicious! Made this morning with regular bread and gluten free bread. Was leery about the nooch in the flour mixture, but it gave it a great tang. Don't have gingerbread fans in my house so dipped in Dreena Burton's Celestial Cream recipe. Thank you so much for your generosity in providing so many delicious dishes and for splaying them out so beautifully in mouth-watering photos.

      whats a substitute for chickpea flour? this is my first recipe that ive seen call for it and i dont want to buy a whole bag of it just for this.

        well we do use chickpea flour quite a bit like for the crabcakes, omelettes, quiches etc. It's a great flour! It gives the french toast a more unique coating. But you could use any flour
