    I’ve got vegan recipes with coconut milk for breakfast, dinner, and dessert. First I'll share how to make delicious coconut milk and chia seed pudding for yummy breakfast parfaits. For dinner, it's crispy coconut tofu tacos with avocado crema, and then dessert is a simple no-bake recipe for vegan coconut lime cheesecake bites. Check out the video below!

    Thai Kitchen Organic Coconut Milk is a great dairy substitute for everyday use with its premium taste and quality. Not only is it vegan and organic, but also gluten-free and has no added sugar. This makes it a versatile player in the kitchen. I hope you try these recipes and get creative making your own.

    It's totally normal for it to separate in the can. In that case, just shake it up or give it a good stir before using it! Sometimes I even allow it to separate by placing a can in the fridge overnight. Doing this allows the thick cream to rise to the top, while the water stays at the bottom. You can scoop out the thick cream to make a whipped topping!

    Coconut milk is so rich and creamy that it makes for a decadent and filling breakfast component. For these parfaits, I make a coconut milk and chia seed pudding then layer it in jars with granola, mixed berries, and coconut flakes. A little drizzle of maple syrup tops it off right before you dig in!

    dinner: crispy coconut tofu tacos

    Your taco Tuesday will be elevated if you serve these crispy coconut tofu tacos! They'll satisfy your cravings and leave you coming back for more. I use full-fat coconut milk from Thai Kitchen in the batter for the crispy tofu, as well as in the creamy avocado crema that's drizzled on top.

    dessert: vegan coconut lime cheesecake bites

    Thai Kitchen coconut milk also works great to create a dreamy base for dairy-free cheesecake. For these vegan coconut lime cheesecake bites, I mixed the coconut milk with raw cashews and it all gets blended with lime juice, agave nectar, and coconut oil until very silky smooth. The cheesecake is very light and delicate and pairs well with the date-sweetened walnut crust. I'm not a raw foodie, but these are certainly worth stepping into the world of raw food for.

      Just made the lime cheesecakes... Omg so good. You can't mess this recipe up. I made my own crust using pecans, maple syrup, flax meal, and it still turned out great!! Love this omg

      Just made the tofu tacos and they were amazing! I made them with a kale salad instead of the cabbage and it tasted great! The avocado crema is super flavorful with a great kick. Ganna try the butternut squash ones next!

      I like tofu, I don't love tofu. This taco recipe is FANTASTIC. I absolutely loved it. I loved the different flavors and textures. This is definitely one of my favorites.
